About type of tea
No one would argue that China is homeland of tea. Hardly anybody in the world can tell you better than the Chinese where the man and the tea plant first met. If you are asked where tea comes from you will be right to answer that it originates in the province of Yunnan in the South-West of China.
The name of this province is translated from the Chinese as “beautiful clouds in the South”. The area of Yunnan is approximately the same as that of California but size is by far not the only merit of this land. The contrasts of its terrain will definitely strike your imagination. In the North where Yunnan borders on Tibet there are snow-covered mountain peaks reaching the height of up to 7000 meters and in the South and West there are humid tropical jungles in which elephants live.
Accordingly to historic documents the transformation of wild tea tree into the cultivated tea plant, as we know it today, began in Yunnan 21 centuries ago. One of the most striking things is that today there are still living witnesses of this process which are known as “three ancient tea kings”, i.e. oldest tea trees in the world. The “youngest” is 800 years of age and grows on a mountain. It undoubtedly belongs to the man cultivated variety. The oldest tree from Bad is 1700 years old and is wild. The 1000 years old king tree may be referred to the intermediate type – it grows in the region of Linkang. It is well worth noting that all these three trees are in good health and continue to regularly deliver fresh leaves – so generous is the local nature.
It should be noted that the climate in Yunnan is truly unique. Usually it is warm and humid even in the mountains at quite high elevations. All tea plantations in the province are located at the altitudes of at least 1200 meters above sea level. On Yunnan tea plantations one can find up to 200 different sorts of the tea plant all of which are descendants of the oldest variety of the tea tree with wide leaves. Another characteristic feature of Yunnan tea plantations is rather big intervals between separate tea bushes. Such an “ineffective” usage of land is affordable luxury in the province that boasts with large areas of unoccupied land. In such conditions each bush gets more sunshine and, hence, produces leaves extremely rich in tea flavour and aroma.
The initial processing of the harvested tea leaves – especially at high-elevated plantations - is carried out at tiny factories producing sometimes only one hundred kilograms of tea per day. Very often the technology implies withering tea leaves above the open fire and for this reason tea sometimes gets a slightly smoky aroma.
