Del Castillo justifiably paid such great attention to this special drink when he described brilliance and richness of the Aztecs leader, as cocoa was much more than just food for native inhabitants of South America. Modern scientists agree that cocoa is one of the oldest plants on the planet. It appeared in 1500 BC approximately. The Olmecs and the ancient Maya cultivated cocoa to mill its seeds and prepare a drink called “chokolatl” that was only available for aristocracy. For many centuries cocoa beans were used not only as currency, but also in rituals and sacrificial offerings. The Aztecs believed that their god Quetzalcoatl gave them cocoa and was therefore expelled from heaven, but he promised to return as a light-skinned man. No wonder that the Aztecs decided that the Spanish conquistador Hernán Cortés was their return god Quetzalcoatl and offered him chokolatl. Cocoa became one of the first products that Cortes brought to Spain. For a century it was used only as a drink and never left the country before the XVI century when France took its leadership in chocolate fashion. This happened in 1615 after the Spanish Infanta Anne of Austria, the most beautiful woman in Europe, became a wife of King Louis XIII and presented this amazing product to the French nobility. Since then chocolate started gaining its popularity rapidly in France, finding more and more new admirers. By the way, it reminds another story connected with tea spreading. The latter became a national drink and one of the symbols of England thanks to a woman as well - she was the Portuguese princess Catherine of Braganza who married King Charles II in 1664 and favoured her husband with Bombay and a tradition of tea drinking. The kings of France have done a lot for the development of the chocolate culture. At the end of the XVII century Louis XIV by his personal order allowed a free sale of chocolate; during the reign of Louis XV chocolate beverage became a strong delicacy. Production of various candies, lozenges and pills began, and Louis XVI also introduced chocolatiers to France. Nevertheless real industrial production of chocolate began only in XIX, when a new method of cocoa processing was invented that allowed producing chocolate bars. Today we cannot imagine our lives without chocolate and secret of this passion is not only in its excellent taste. Modern research confirms that chocolate is a good antidepressant, as it contains endorphins - a hormone of joy. Besides it increases energy and efficiency. And finally a fascinating and delicate chocolate flavour relieves stress and enhances mood.
